SPELT DOUGHNUT RECIPE

As this beautiful holiday reaches halfway point, I wanted to share a few tips to help you feel mindful and balanced:

1. Rest and de-stress: Take time for self-care to combat holiday stress.

2.  Indulge mindfully: Allow yourself occasional treats without guilt attached!

3. Keep satisfying snacks on hand: Opt for protein-rich snacks and healthy options to curb hunger.

4. Control the dessert menu:  Volunteer to bring desserts that align with your goals to holiday gatherings.

 

INGREDIENTS

  •  1 c spelt flour
  • 1.5 tsp baking powder
  • 1/3 c coconut sugar
  • 1 tsp apple cider vinegar 
  • 2/3 c almond milk
  • 2.5 tbsp coconut oil (melted)
  • 1 tsp pure vanilla extract

    DIRECTIONS

    Whisk dry ingredients  in mixing bowl. In a separate bowl, stir the wet ingredients well. Pour wet mixture into the dry and mix until even. Pour batter into lightly greased doughnut pan and bake in preheated oven at 350* for 8 minutes. Drizzle with desired toppings and enjoy!
